BUT WHO IS MR. GONFLÉ ?
TIMOTHY BRETON, a baker and pastry chef, has made his job a real vocation. After significant experiences at the Plaza Athénée, the Café de l'Homme and Bo&Mie, he chose to put his know-how at the service of ILO COLLECTION in 2024 by launching the GONFLÉ bakeries. These same bakeries that now supply all the group's hotels with bread and pastries.
At GONFLÉ, the quality of raw materials combines with Timothy's creativity to give life to unique creations, from charcoal croissants filled with vanilla cream to raspberry croissants, to revisited Kouign-Amann.
